Olive trees are amongst the oldest cultivated trees in the world__over 6,000 years old __ and are native to Mediterranean Europe, Asia and parts of Africa.

The olive is harvested at either its young, green stage, or left to mature on the branch until it becomes dark brown or black.

There are hundreds of varieties of olives, some of which are grown to eat and others specifically for their oil. Olives are eaten whole or pitted, then stuffed with fillings such as pimento, garlic, almonds, feta or anchovies.

It take five kilos of olives to produce one litre of oil; each tree produces three to four litres.

Like wine, the taste of the olive and its oil is affected by the environment and the quality and quantity of the harvest. Different oils have different uses.
