CHOCOLATE MELT

It’s surprisingly easy to create a sensational bowl of molten chocolate. Take a medium sized saucepan, pour in water until a third full then create a bain marie by placing a heat-proof bowl over the water. Break up the chocolate into pieces, place into the bowl, slowly bring water to boil and stir the chocolate as it melts. Take care not to let the water boil over into the chocolate or will curdle.

Once melted it can be used as a fondue, a basis for cakes and brownies or mix with unsalted butter to make a deliciously rich icing.
